Hi,
two ways are possible:

(1) follow the upgrade path from 5.x to 6.x to 7.x to 8.x. I don't know if it is possible to skip a release. Install a test server system and make some trials. Possibly everything works ...
Your ID file encryption strength will be less, since you will keep the old ID. Depending on your language I can perhaps help you with installation medias. Folder design will not always update correctly. I guess, you will have some disfunctions at the and of the upgrades, depending on what you are using... So consider the second solution.

(2) Install a new, clean Domino Notes R8.x environment and use Lotus Script to copy docs and folders to the new mailboxes.
Benefits: better security, upgrade in two phases, clean and stable system. In a second step you can copy docs and folders, while the system is already running. There are ways to automatically register a big number of users and to distribute clients in a network. Users may begin to work over iNOtes before the distribution of new clients.

In any case you will need additional hardware und temporary servers.

What are your OS platforms ?
Are you using compiled C++ programs ?
Are you using non standard Applications/templates ?
Did you personalize Codes / Templates ?
Do you use one Lotus Domino main domain ?
Do you want to use a R5 and R8 Domino server in a mixed environment ?
