When you say 'sort' do you mean figure out where in the Domino.Doc (LDDM) library the scanned image should be stored?
If so, I guess you would need some sort of forms processing solution which could read the necessary info, turn that into location information (and maybe metadata) and then store to the library.
I have worked recently on a system where a user creates a bar-coded 'header sheet' based on the hardcopy document using a custom Domino web application, and then the scanning software (in this case 'AnyDoc') reads the barcodes and creates an intermediate file which is then read by a further application which actually stores the image into DomDoc.
