Install them in seperate folders e.g.

Lotus Notes 5 in c:\Lotus5\...
Lotus Notes 6 in c:\Lotus6\...
Lotus Notes 7 in c:\Lotus7\...

Start with the the Notes 5 installation, then the notes 6 installation.

Before starting with the notes 7 installation rename the folder c:\Lotus6 to e.g. c:\Lotusxxx and install notes7. Otherwhise the the installation of notes 7 will point to the ini of the notes 6 installation. When the ini isn't found (because of renaming the folder) a normal installation of notes 7 can be performed.

After the notes 7 installation you can rename the folder of the notes 6 installation back to normal.

As an alternativa to renaming the folder you could also deleted the Lotus registry key from HKEY_Local MACHINE before the notes 7 installation which will aslo do the trick.
