Since you only need to verify that the employee accessed their mail on that day - all you need to confirm is actual database access by that employee. You don't need to be concerned about whether the access was via a browser.
You could look at the properties of their mail file - this will show if it was accessed by that person on that day.
Alternately you could just look at the server log - just look for access to their mail file on that day by that user.
