Domino Server 6.0.2 CF2 Windows 2000

Hello all,
I have to upgrade one of my servers OS. It is 2000 right now and I want to upgrade it to 2003. I was thinking since our company is planning on upgrading our domino servers at the end of the year if it would hurt to upgrade this one now to domino 8.5. It is cuurently 6.0.2CF2, all our other domino servers are at 7.0.2. I am not sure why that domino server is still at that version, when I took over this job I got no explanation.
Right now that server is in our DMZ and only has like 10 db's that replicate back to another one of our servers.
I have never done an upgrade before that is why I ask the question, since this domino server is not the router/hub server is it ok to upgrade it before we do the router/hub one? I guess I should clarify things and say it won't be an upgrade but a new install of domino and then I will just decommission the old server.

Also if I do upgrade this server to domino 8.5 what are the things I need to look out for so it does not change any of the templates on the 7.0.2 servers.
