If it's something you're seeing at the server console, it's a process to convert MIME content in emails to Notes Rich Text format (CD, which stands for either Composite Document or Composite Data -- the original, non-abbreviated version is lost to history, and both turn up in documents over the years) for users who have "Prefers Rich Text" selected as their mail format preference on their Person document. For users who have "Prefers MIME" or "Leave in sender's format", MIME-to-CD conversion is carried out in the Notes client.
