Subject: how to "Set current font as mail default" for every user in the organisation?

My customer wants all its users to compose/reply their notes mail in a non-standard font (e.g. Garamond).
First, I modified the mailtemplate so all appropriate forms have their bodyfields in the requested font. After a design refresh I checked the design changes (OK), but the new font does not show up on any document.
I tested the "Set current font as mail default" feature, which works great, but has to be done by every single user. Not very efficient.
There seems to be no policy document to set this options.
So questions that remain are:
- where and how is the setting stored?
- how can I access it?
- can it be centrally managed/influenced somehow?
