The client connection process is described in detail in the admin guide, chapter 5.
You do not need to change the default port 8082 for community or 8081 for meeting services. These ports are used in case there is no firewall blocking them. The initial connect always try to handshake on 8082/81 and only after a failure it uses the ports you defined for tunneling. So only set the ports "Address for HTTP tunneled client connections" and "Address for HTTP tunneled client connections" to 80.
I have a tunneled system here either and I have some problems, too, but after careful examination I'm sure, it is not the tunneling. Problematic is Java, is Domino 6 itself, are some missing debug level, but tunneling itself is fine.
