Without more information, I am speculating that you are using the calendar integration to create online meetings. By nature, these meetings are not listed as you think a meeting that was created within the meeting center (stconf.nsf) would be visible. You would see the meeting in the My Meetings view, those meetings would be subject with "Invitation:" as a prefix in the subject.
This is how it works... I am not aware of any customizations to make the meeting document listed. You may be able to customize the stconf.nsf with a new (maybe, single category) to display meetings from the calendar and meeting center, by user. (Just my $0.02).
By the way, we also use the calendar integration and are happy with it. I have not found too many people stating they use it as well. There is not much documentation (other than setting it up) on how it works or troubleshooting, but I have been able to figure out a lot of it.
