Issue was two-fold.
A) Proxy server and Meeting server cannot be on same server, period. While the server performance didn't cause issues, issues were caused by servers not knowing which sessions to use and it caused random problems.
We moved the proxy server away and it made things better. But problems still continued in certain occasions(especially when sharing applications screen)
B) The application screen sharing seemed to kill the performance as well, and it was not related to HW resources or network resources.
I happened to change company i work for in january, so i don't know if they were able to solve that problem with the screen sharing part with IBM support.
