So you do mean subprocesses. Well, isn't that a straightforward use of subprocesses? Only somewhat extended with some inheritance of previously specified fields?
If you start a new subprocess, and a document is added to the binder, the fields could be blank by default, or whatever you want them to be, i suppose. You could provide some field definitions in the form, or some custom attributes in the process definition, or some customisation code in a LWF API event handler, or retrieve some business rules to manage which fields to inherit from which document to which new document.
Did you actually try to implement this yet? I do not foresee any technical nor any functional limitations at this point.
